Hey all! 
  With new foods comes new tastes. This blog will be dedicated to recipes we have found, cooked, and loved! Please share your Paleo dinner successes with us all. The more options we have, the better chance of our success.

YAY! I love cooking!
So I just made a turkey burger for lunch tomorrow that I am going to serve over greens with half an avocado (I was lazy and did not feel like making guacamole) and tomatoes. I used a lb of turkey to make 4 burgers. In the turkey meat I mixed in garlic, red onion, sea salt, black pepper and cilantro. Taste test APPROVED!

I am not a morning person so I make egg muffins that I use for my week day bfast (throw in the freezer and pull out as needed). 8 eggs, bag of spinach and 8oz of mushrooms that I bake in a muffin pan at 375 for 20mins. I also do one with eggs, sausage, onion, and green pepper. YUM!

Made Paleo Shepard's Pie tonight! The nice thing now is I have bought alot of the same ingredients you need for alot of the recipes so it's easier to plan and prepare meals! I am really happy that everyday I am trying new vegetables and like them!

Today was turkey chili, lean turkey breast, plum tomatoes, garlic, onion, cumin, oregano, chili powder, red pepper, paprika, salt and pepper and water. It was good served over mixed greens.

made stuffed cabbage with venison burger, chopped fine cauliflower instead white rice,almond flour, eggs, onion, garlic and seasonings with of course cabbage. sauce was organic diced tomato and garlic. made a bunch to freeze.

homemade pulled pork on top of fresh chopped cabagge and carrots!!! yummmmy ---peach vinegar, lil olive oil,blended with 3 fresh strawberries makes a great salad dressing!!!!

That salad dressing idea sounds really good Shannon. Thank you. I am not a big dressing person, but I do enjoy a little flavor. I have never heard of peach vinegar. Where did you find it?

http://www.seasonstaproom.com/ it's in bethlehem you can try any vinegar and olive oil before you buy it, and they have diff spices too. i love it there. Its a little on the pricey side but i like adding diff flavors so i dont get bored.and their website has some great recipes!! hope this helped you

This is a little off-topic, but I noticed in the Giant (grocery store) flyer that Larabars are on sale 4/$5 this week. If they're out of stock, you should be able to get a raincheck. Just thought I'd mention it because several people have recommended them. :)

Last night I made "pizza" with Ezekiel bread topped with diced tomatoes, onions, mushrooms, garlic and a little cheese. It was pretty good, and I didn't feel left out since my family was having pizza.

I just got the Ezekiel bread, it's pretty good. I had a slice of that with almond butter, yummy!

I love to make flaxseed wraps. They are very simple and can be customized and used in a variety of ways.
3 tablespoons ground flaxseed
1/4t baking powder
1/4t onion powder ---I don't always use these spices
1/4t paprika I sometimes use nutmeg for sweetness
pinch of sea slt
1 T coconut oil,melted, plus more for greasing pan
1 T water
1 large egg
Mix together dry ingredients. Stir in 1T coconut oil. Beat in egg and water until blended.
Grease a microwave safe glass pie pan with coconut oil. Pour in batter and spread evenly on bottom. Microwave on high for 2-3 minutes until cooked. Let cool about 5 miniutes.

Remove with spatula. Top with desired ingredients.

I have used it with eggs, tacos, and even personal pizza.

i have posted this before but i think its worthy of reposting lol my son has bad allergies to milk but he isnt missing nothing!!! i blend frozen bananas a lil coconut milk(or almond) and hersheys dark unsweetened coco powder !. gets rid of the sweet tooth and makes the kids happy!!!

Great dinner tonight, chicken, mushrooms, green beans and spaghetti squash. The best thing was Vic asked me if I was trying to kill him, all his morning blood sugar numbers have been low, that has never happened in the last 30, count them 30 years. I asked him if he wanted mashed potatoes or spaghetti squash and he choose squash and liked it. This may be the greatest way of life ever! Thanks guys!

That is AWESOME!! I agree with this change of lifestyle. If is almost like an adventure, trying different foods and trying to "paleoize" some old favorites. I have never had spaghetti squash before, but you are the 2nd person that talked about how much they enjoyed. I need to put that on my list for this week. Thanks for Sharing! And YEAH for Vic!!!!!!

Tonight was pork lime cilantro tacos. So good. Did them in the crock pot on low for 6 hours.
pork tenderloin and one red onion. Eye balled the chicken stock so that it covered about half the meat.
When it was done I added two medium tomatoes. Served over red leaf lettuce with avocado and cilantro.
Everyone else had them turned into actually tacos with rice and cheese.

Made pineapple coconut ice cream. Love it!
1 can full fat coconut milk
2 tbs raw honey
1/4 cup pineapple juice
3/4 cup crushed pineapple
1 tbs vanilla
4 egg yolks beaten till frothy
Bring all but egg yolks and crushed pineapple just to a simmer in a pot. Add 1/4 the milk to the eggs to temper. Add the egg back to the milk pot and bring to a simmer for 5 min. Whisking constantly until thickened. Cool then add to ice cream maker. When almost done, add the crushed pineapple.
I served it with organic unsweetened toasted coconut.
A 1/2 cup scoop was very satisfying.

I am, and always have been in love with Tacos/Soft Tacos. We made them almost once if not twice a month. I planned on making them this week. I was just going to put the meat in lettuce "cups" and add fresh salsa and a little cheese. But OMG when I saw this, I said. I need to try this instead.

FYI...we went to Thomsons Meat Market in Walnutport on Sunday. What an amazing place, I am in LOVE! So much selection and very high quality/decently priced meat. Stop by and pick up your Paleo Selections! I will not be getting my meats anywhere else.

Nikki, I just started getting my meat at Thomsons, it all looks so fresh and it tastes great. It is on my agenda for today.
