I've got 2 egg omlet, farm fresh eggs from Bob Sillman, a ginormous mound of fresh baby spinach sautéed in a bit of butter, then added cherub tomatoes and mozzarella cheese, and 2 pork sausage links!!! Yum! So delicious and satisfying!!
But ... I realize you all don't have time for eggs in the am... Here is a tip, you must stop thinking of breakfast only foods!!! It's a meal, anything goes!!
