This is a rotissorie chicken from SAMs club, made with sauteed spinach, baby Bella mushrooms, garlic, onions, toasted pine nuts... And a cream sauce made with almond meal (that I doctored up w cream of mushroom soup bc I had no idea what I was doing!) served it New Year's Eve with wild rice on the side for my non-Paleo caveman friends!!
