Dinner tonight!

So... tell us, what did you eat today? how satisfied were you?

this 8 am i made a spinach omlet w taylor ham... too salty :-/ wasn't a big fan. No more Taylor ham for me!
I had a dark chocolate flavored coconut water this afternoon!
8:30pm, I chose to make spaghetti squash, with some sautéed spinach, stewed tomatoes, and pork sausage! Can I get a ...YUM!!!
I made the squash in the microwave for 20min; bc it's a college size micro ;-), Katie says she can make it in 8min in hers!
I sautéed the spinach in grapeseed oil, while the sausages were pan frying. Then I used the juice from the stewed tomatoe can and poured some over my sausages and placed the stewed tomatoes on the spinach pan on very low.
After some time, I sliced the sausages into small pieces, put them back on pan, added a can of hunts tomato sauce and a mixture of cayenne pepper, black pepper, basil, celery seed and a hint of salt.
Seriously made me feel great when Sean said... "Whoa, this is awesome!" I liked it too!!!
Team... I'm kicking the sugar cravings!

Yummmm! that looks really good and where did you get that coconut chocolate stuff from? I made fish steak broccolli and salad for dinner. A few weeks ago I found this reciepe where you chop an apple add some sliced raw cabbage and caraway seeds a little lemon juice and sea salt.First time i had it i wasnt so sure but i'm really loving it now!!Definetly a great summer food.

Oooo!sounds good! I got the water at Rite Aid! It's in a cooler at the far end of the Easter isle! Made by Zico!
Now I'll have to race you for it ;-) just kidding!! I absolutely love it!

This picture looks so delicious! I am making it tonight for dinner!! I've recently made a Coconut Cake for the Easter weekend that was from a Paleo Book, it turned out great (I just hope it makes it till Easter,lol!). For some extra Paleo food ideas I also found Pintrest is very helpful- search Paleo. When I need some help with cooking ideas Pintrest is where I get my inspiration from. Thanks for the dinner idea!

Just ran on coffee this morning, had to prepare for Elizabeth's IEP update and conference with the school professionals. Was going to try to sneak in cross-training before the conference, but that would've been cutting it too close. I wasn't hungry, so the coffee alone was fine.

I got home around 2 and made a huge salad with Romaine, leftover rotisserie chicken (thanks Kerri for that idea!), onions, black olives, and jalapenos, and was finally sitting down to eat it when.....my poor guy Victor walks in from school and gets sick all over the kitchen floor.

I am finally eating that salad now at 10 p.m. - I just didn't have an appetite after cleaning up the mess. These germs are getting me down.

I have increased the amount of cinnamon I take and am adding magnesium as well, both to help keep the blood sugar lower than it was in January and to see if it helps mitigate cravings. Will have my sugar checked again next month to evaluate my longer term control. Still tweaking things to get it "right."
